does anyone know how to create an animated GIF that you see on some of the games' screenshots?

Yep, just install TIshot and run it together with VTI and it'll capture VTI screen for you. You can download it from ticalc by going here: http://www.ticalc.org/archives/files/fileinfo/99/9983.html. Read the readme file to controls to turn the recording on and off as well as frameskip, which I sugges you used since files will end up rather large. Though, I would also recommend cleaning up your animated gif after capture and cutting out bad frames to reduce the size and improve its quality. Jasc Animation Shop 3 does a pretty good job at this while keeping it simple and is also cheap to buy (comes free if you buy Jasc Paint Shop Pro).

I'd use PTI. It has a built in screenshot taker. Pretty good emulator too.
